Ingredients
  

  • 200 g digestive biscuits, crushed
  • 100 g unsalted butter, melted
  • 2 tbsp instant coffee granules
  • 400 g sweetened condensed milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 200 g apples, peeled, cored, and diced optional
  • 50 g sugar (for compote) optional
  • 1 tsp cinnamon (for compote) optional
  • Fresh mint leaves (for garnish) optional

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the crushed digestive biscuits and melted butter until well mixed. Press the mixture firmly into the base of a 23 cm pie dish to form the crust. Bake for 10 minutes, then allow to cool.
  3. In a clean bowl, whisk together the instant coffee granules, sweetened condensed milk, eggs, vanilla extract, and salt until smooth and well combined.
  4. Pour the coffee mixture over the prepared crust and bake for 25 minutes, or until the center is set. It should be slightly chewy in texture.
  5. While the pie is cooling for about 15 minutes, prepare the apple compote. In a saucepan over medium heat, combine the diced apples, sugar, and cinnamon. Cook until the apples are soft and syrupy, about 8–10 minutes.
  6. Once the pie has cooled, slice it into neat pieces and top each slice with a generous spoonful of apple compote. Garnish with fresh mint leaves if desired.
