- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the crushed digestive biscuits and melted butter until well mixed. Press the mixture firmly into the base of a 23 cm pie dish to form the crust. Bake for 10 minutes, then allow to cool.
- In a clean bowl, whisk together the instant coffee granules, sweetened condensed milk, eggs, vanilla extract, and salt until smooth and well combined.
- Pour the coffee mixture over the prepared crust and bake for 25 minutes, or until the center is set. It should be slightly chewy in texture.
- While the pie is cooling for about 15 minutes, prepare the apple compote. In a saucepan over medium heat, combine the diced apples, sugar, and cinnamon. Cook until the apples are soft and syrupy, about 8–10 minutes.
- Once the pie has cooled, slice it into neat pieces and top each slice with a generous spoonful of apple compote. Garnish with fresh mint leaves if desired.
