Ingredients
  

  • 250 g all-purpose flour
  • 50 g whole wheat flour
  • 60 g unsalted butter, softened
  • 150 ml whole milk, lukewarm
  • 20 g sugar
  • 5 g salt
  • 7 g instant yeast
  • 150 g pitted dates, finely chopped
  • 40 ml water (for caramel)
  • 75 g brown sugar (for caramel)
  • Chopped pistachios for garnish optional
  • Flaky sea salt for garnish optional

Method
 

  1. In a mixing bowl, combine all-purpose flour, whole wheat flour, instant yeast, sugar, and salt. Mix well. Gradually add the lukewarm milk and softened butter, kneading until a smooth dough forms.
  2. Cover the dough with a damp cloth and let it rest in a warm place for 1 hour or until doubled in size.
  3. Once the dough has risen, punch it down and roll it out on a lightly floured surface into a rectangle about 1 cm thick.
  4. Evenly distribute the finely chopped dates across the surface of the rolled-out dough.
  5. Fold the dough in thirds to encase the dates, then roll it out again and cut into triangles. Roll each triangle tightly from the base to the tip to shape into croissants.
  6. Place the shaped croissants on a lined baking tray and let them rise for an additional 30 minutes.
  7. Preheat the oven to 190°C (375°F). Bake the croissants for 20–25 minutes or until golden brown and puffed.
  8. In a small saucepan, combine brown sugar and water over medium heat. Stir until it reaches a smooth, caramel consistency, about 5–7 minutes.
  9. Drizzle warm date caramel over the baked croissants and garnish with chopped pistachios or a sprinkle of sea salt.
