  • 200 ml heavy cream
  • 150 g honey
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Pinch sea salt
  • 200 g mixed fresh berries (e.g., strawberries, blueberries, raspberries) optional

Method
 

  1. In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until just steaming, but not boiling. Stir occasionally.
  2. While the milk mixture is heating, whisk together the egg yolks, honey, and vanilla extract in a mixing bowl until well combined.
  3. Slowly pour the hot milk mixture into the egg yolk mixture while whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 6–8 minutes). Use an instant-read thermometer to check that the mixture reaches 82°C (180°F).
  5. Remove from heat, and strain the mixture through a fine sieve into a bowl to remove any cooked egg bits. Add a pinch of sea salt.
  6. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  7. Pour the cooled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (about 20–25 minutes).
  8. Transfer the gelato into an airtight storage container and freeze for an additional 2 hours to firm up.
  9. To serve, scoop the gelato into bowls or cones, top with mixed fresh berries, and garnish with mint leaves if desired.
