- In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until just steaming, but not boiling. Stir occasionally.
- While the milk mixture is heating, whisk together the egg yolks, honey, and vanilla extract in a mixing bowl until well combined.
- Slowly pour the hot milk mixture into the egg yolk mixture while whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 6–8 minutes). Use an instant-read thermometer to check that the mixture reaches 82°C (180°F).
- Remove from heat, and strain the mixture through a fine sieve into a bowl to remove any cooked egg bits. Add a pinch of sea salt.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
- Pour the cooled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (about 20–25 minutes).
- Transfer the gelato into an airtight storage container and freeze for an additional 2 hours to firm up.
- To serve, scoop the gelato into bowls or cones, top with mixed fresh berries, and garnish with mint leaves if desired.
