Classic Pumpkin Fritter with Sesame Crunch

- In a mixing bowl, combine the pumpkin puree, sugar, eggs, and milk. Whisk until smooth.
- In another bowl, mix the flour, baking powder, cinnamon, and nutmeg. Gradually add this mixture to the wet ingredients until just combined; do not overmix. Let the batter rest for 10 minutes.
- Heat oil in a deep frying pot over medium heat until it reaches about 180°C (350°F). Test the temperature by dropping a small amount of batter into the oil; if it sizzles and rises to the surface, it's ready.
- Using a slotted spoon, carefully drop spoonfuls of batter into the hot oil. Fry in batches for about 3-4 minutes or until golden brown, turning occasionally for even cooking.
- Once cooked, remove the fritters with the slotted spoon and place them on paper towels to drain excess oil.
- While still warm, sprinkle sesame seeds generously on top of the fritters.
- Plate the fritters and drizzle with honey if desired. Serve warm and enjoy!
