  • 50 g sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp cinnamon

  • 100 ml milk
  • 40 g sesame seeds for topping
  • Oil for frying

Method
 

  1. In a mixing bowl, combine the pumpkin puree, sugar, eggs, and milk. Whisk until smooth.
  2. In another bowl, mix the flour, baking powder, cinnamon, and nutmeg. Gradually add this mixture to the wet ingredients until just combined; do not overmix. Let the batter rest for 10 minutes.
  3. Heat oil in a deep frying pot over medium heat until it reaches about 180°C (350°F). Test the temperature by dropping a small amount of batter into the oil; if it sizzles and rises to the surface, it's ready.
  4. Using a slotted spoon, carefully drop spoonfuls of batter into the hot oil. Fry in batches for about 3-4 minutes or until golden brown, turning occasionally for even cooking.
  5. Once cooked, remove the fritters with the slotted spoon and place them on paper towels to drain excess oil.
  6. While still warm, sprinkle sesame seeds generously on top of the fritters.
  7. Plate the fritters and drizzle with honey if desired. Serve warm and enjoy!
