- Preheat your oven to 180°C (350°F). Grease and flour the cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed until well combined.
- Gradually add the boiling water to the batter, mixing until smooth (the batter will be thin).
- Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Next, transfer them to a cooling rack to cool completely.
- For the cream filling, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once the cakes are cooled, place one layer on a serving plate. Spread half of the cream filling on top.
- Place the second cake layer on top of the first, and use the remaining cream filling to frost the top.
- Decorate with mixed berries and mint leaves. Chill in the refrigerator for at least 30 minutes before serving for optimal flavor and texture.
