Ingredients
  

  • 200 g cooked turkey breast, shredded
  • 150 g romaine lettuce, chopped
  • 100 g cucumber, sliced
  • 150 g cooked beets, diced
  • 250 g plain yogurt
  • 30 g fresh mint leaves, chopped
  • 30 ml tahini
  • to taste Salt and black pepper
  • 50 g feta cheese, crumbled optional
  • 30 g walnuts, chopped optional

Method
 

  1. If using raw beets, preheat the oven to 200°C (400°F). Wrap them in foil and roast for 30-40 minutes until tender. Allow to cool, then peel and dice. If using pre-cooked beets, proceed to step 2.
  2. In a mixing bowl, combine the plain yogurt, half of the chopped mint, salt, and pepper. Mix well to create the mint yogurt dressing.
  3. In a large serving bowl, layer the chopped romaine, sliced cucumber, and diced beets.
  4. Top the salad with the shredded turkey, and drizzle the mint yogurt dressing over everything.
  5. Finish with the remaining fresh mint, tahini drizzle, and optional feta cheese and walnuts if desired.
  6. Serve immediately and enjoy this colorful, nutritious salad!
