Crunchy Date Cookie with Apple Compote

- Preheat your oven to 180°C (350°F) and line the baking tray with baking paper.
- In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined.
- In another bowl, whisk together the flour, oats, baking soda, salt, and optional cinnamon.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined. Fold in the chopped dates and optional walnuts.
- Using a cookie scoop, drop balls of dough onto the prepared baking tray, leaving space between each for spreading.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crunchy. Allow cooling for 10 minutes on the tray before transferring to a wire rack.
- While cookies are cooling, peel, core, and chop 2 medium apples. In a saucepan over medium heat, cook the apples with a splash of water and optional cinnamon for about 10 minutes until soft. Stir occasionally.
- Serve cookies warm topped with apple compote and a sprinkle of nuts if desired.
