  • 200 g all-purpose flour
  • 100 g rolled oats
  • 150 g chopped dates
  • 100 g unsalted butter, softened
  • 100 g brown sugar
  • 1 large egg
  • 5 g baking soda
  • 5 g salt
  • 1 tsp vanilla extract
  • 50 g chopped walnuts optional
  • 1/2 tsp ground cinnamon optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line the baking tray with baking paper.
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In another bowl, whisk together the flour, oats, baking soda, salt, and optional cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Fold in the chopped dates and optional walnuts.
  6. Using a cookie scoop, drop balls of dough onto the prepared baking tray, leaving space between each for spreading.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown and crunchy. Allow cooling for 10 minutes on the tray before transferring to a wire rack.
  8. While cookies are cooling, peel, core, and chop 2 medium apples. In a saucepan over medium heat, cook the apples with a splash of water and optional cinnamon for about 10 minutes until soft. Stir occasionally.
  9. Serve cookies warm topped with apple compote and a sprinkle of nuts if desired.
