  • 500 g beef sirloin, cut into cubes
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 500 g sweet potatoes, peeled and diced
  • 1 medium avocado, diced
  • 1 small cucumber, thinly sliced
  • 10 g fresh mint, chopped
  • 1 tbsp lime juice
  • 50 g plain yogurt (for serving) optional

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly on a baking tray and roast in the oven for about 25–30 minutes, or until they are fork-tender and golden.
  3. While the sweet potatoes are roasting, heat the olive oil in a skillet over medium-high heat. Add the beef cubes and sear for 3-4 minutes until browned on all sides.
  4. Sprinkle the curry powder, ground cumin, salt, and black pepper onto the beef. Stir well to ensure the beef is coated. Cook for another 5–7 minutes, or until the beef is cooked to your preferred doneness.
  5. In a separate bowl, combine the diced avocado, cucumber, lime juice, and chopped mint. Toss gently to combine.
  6. Once the sweet potatoes are done, remove them from the oven and allow to rest for about 10 minutes.
  7. To serve, plate a serving of sweet potatoes, top with the curry-spiced beef, and garnish with the avocado-cucumber mixture. Enjoy while warm!
