- In a mixing bowl, combine the shrimp with olive oil, curry powder, garlic powder, paprika, salt, and lime juice. Toss to coat well and let marinate for 5 minutes.
- Heat a frying pan over medium heat. Add the marinated shrimp and cook for 3-4 minutes, or until they turn pink and opaque. Stir in the cooked corn for an additional minute.
- If you prefer a toasted sandwich, briefly toast the whole-grain bread in the toaster or in another pan until golden brown.
- Place a generous portion of the shrimp and corn mixture on two slices of bread. Top with chopped romaine lettuce, then close with the remaining slices of bread.
- Cut the sandwiches in half and serve with a simple side salad of your choice and a lime wedge for squeezing on top.
