  • 200 g shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tbsp lime juice
  • 100 g corn, cooked (fresh or frozen)
  • 4 slices whole-grain bread
  • 100 g romaine lettuce, washed and chopped
  • Sliced avocado optional
  • Sliced cucumber optional
  • Additional lime wedges for serving optional

Method
 

  1. In a mixing bowl, combine the shrimp with olive oil, curry powder, garlic powder, paprika, salt, and lime juice. Toss to coat well and let marinate for 5 minutes.
  2. Heat a frying pan over medium heat. Add the marinated shrimp and cook for 3-4 minutes, or until they turn pink and opaque. Stir in the cooked corn for an additional minute.
  3. If you prefer a toasted sandwich, briefly toast the whole-grain bread in the toaster or in another pan until golden brown.
  4. Place a generous portion of the shrimp and corn mixture on two slices of bread. Top with chopped romaine lettuce, then close with the remaining slices of bread.
  5. Cut the sandwiches in half and serve with a simple side salad of your choice and a lime wedge for squeezing on top.
