Ingredients

  • 2 large (approx. 120 g) eggs
  • 1 ripe (approx. 200 g) avocado
  • 1 tsp (5 ml) lemon juice
  • (optional, to taste) salt
  • A sprinkle of finely chopped (such as parsley or basil) fresh herbs optional

Equipment

  • Large saucepan
  • Fork (for fluffing couscous)
  • Heatproof mixing bowl
  • Small spoon

Method

  1. Begin by bringing a saucepan filled with water to a boil. Carefully add the eggs and let them cook for about 10 minutes for hard-boiled eggs.
  2. Once cooked, remove the eggs and place them in cold water for a few minutes to cool.
  3. While the eggs cool, cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
  4. Mash the avocado with a fork until soft and creamy. Add lemon juice and mix well to prevent browning.
  5. Peel the cooled eggs, chop them finely, and add them to the avocado mash. Stir until fully combined.
  6. For a smoother texture, you can puree the mixture if desired or add a little breast milk or formula to attain the preferred consistency.
  7. Taste the mash and sprinkle a pinch of salt if you choose. Serve in small portions suitable for the baby.
