- Begin by marinating the beef: in a bowl, combine 1 tablespoon of olive oil, minced garlic, smoked paprika, salt, and pepper. Add the beef slices and toss until evenly coated. Let it marinate for about 15 minutes.
- While the beef is marinating, bring a small pot of water to a boil. Add the broccoli florets and blanch for 3 minutes until tender-crisp. Drain and set aside.
- Heat a grill pan or skillet over medium-high heat. Add 2 tablespoons of olive oil. Once hot, add the marinated beef and cook for about 3-4 minutes per side, or until cooked to your desired doneness. Remove from heat.
- In a large mixing bowl, combine the baby spinach, torn lettuce, and blanched broccoli. Toss gently to combine.
- Slice the cooked beef into strips and arrange it on top of the salad.
- Finish with a sprinkle of fresh cilantro and serve with lime wedges on the side. Enjoy the salad while it’s crisp!
