- In a large pot, boil salted water and cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
- In a frying pan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the minced turkey to the pan, seasoning with smoked paprika, salt, and pepper. Cook for 8-10 minutes until the turkey is browned and cooked through.
- Stir in the diced carrots and corn, and continue to cook for an additional 5 minutes until the veggies are tender.
- Add the cooked pasta to the turkey and vegetable mixture, tossing everything together until well combined and heated through. Adjust seasoning with more salt and pepper if necessary.
- To serve, divide the pasta mixture into two portions and garnish with fresh mint. Add a spoonful of yogurt on the side for extra creaminess.
