Ingredients
  

  • 200 g turkey breast
  • 150 g whole grain pasta
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp smoked paprika
  • 100 g carrots
  • 100 g corn (fresh or frozen)
  • to taste Salt and pepper
  • Handful of chopped fresh mint leaves
  • 100 g plain yogurt

  • Griddle or frying pan

Method
 

  1. In a large pot, boil salted water and cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
  2. In a frying pan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the minced turkey to the pan, seasoning with smoked paprika, salt, and pepper. Cook for 8-10 minutes until the turkey is browned and cooked through.
  4. Stir in the diced carrots and corn, and continue to cook for an additional 5 minutes until the veggies are tender.
  5. Add the cooked pasta to the turkey and vegetable mixture, tossing everything together until well combined and heated through. Adjust seasoning with more salt and pepper if necessary.
  6. To serve, divide the pasta mixture into two portions and garnish with fresh mint. Add a spoonful of yogurt on the side for extra creaminess.
  7. Pack into a bento box for a balanced meal on-the-go!
