- Prepare the Chicken: Season the chicken breast with olive oil, salt, and cracked black pepper. Let it marinate for about 10 minutes.
- Grill the Chicken: Preheat your grill pan or grill over medium-high heat (around 200°C / 400°F). Grill the chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 75°C (165°F). Remove it from the heat and let it rest for 5 minutes.
- Toast the Bread: While the chicken is resting, toast the whole grain bread slices until golden brown and crisp in a toaster or under the grill.
- Assemble: Slice the grilled chicken into thin strips. Place the toasted bread on plates, layer it with the sliced chicken, and top with sliced tomatoes and cucumber.
