  • 1 teaspoon cracked black pepper

  • 1 cucumber, sliced
  • 30 g Handful of arugula
  • 100 g Sliced avocado optional
  • Fresh herbs (basil or parsley) optional

Method
 

  1. Prepare the Chicken: Season the chicken breast with olive oil, salt, and cracked black pepper. Let it marinate for about 10 minutes.
  2. Grill the Chicken: Preheat your grill pan or grill over medium-high heat (around 200°C / 400°F). Grill the chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 75°C (165°F). Remove it from the heat and let it rest for 5 minutes.
  3. Toast the Bread: While the chicken is resting, toast the whole grain bread slices until golden brown and crisp in a toaster or under the grill.
  4. Assemble: Slice the grilled chicken into thin strips. Place the toasted bread on plates, layer it with the sliced chicken, and top with sliced tomatoes and cucumber.
