  • 150 g cooked beets, sliced
  • 100 g mushrooms, sliced
  • 2 tbsp harissa sauce
  • 2 large whole-grain wraps
  • 1 tbsp olive oil

Method
 

  1. In a mixing bowl, coat the tofu with harissa sauce, adding a pinch of salt and pepper. Let it marinate for about 10 minutes.
  2. Heat olive oil in a skillet over medium heat. Add the marinated tofu strips and cook for about 5-7 minutes until they are golden brown on all sides.
  3. Add the sliced mushrooms to the skillet and cook for another 5 minutes or until softened and golden.
  4. Warm the whole-grain wraps in a separate pan for 2 minutes on each side, making them more pliable.
  5. Place the cooked tofu, beets, and mushrooms onto the center of each wrap.
  6. Add a handful of arugula or spinach if desired.
  7. Roll the wraps tightly, then slice them in half. Garnish with sesame seeds before serving.
  8. Serve warm alongside a simple side salad of your choice.
