Ingredients
  

  • 200 g firm tofu
  • 100 g frozen peas
  • 1 medium zucchini
  • 2 whole wheat wraps
  • 2 tbsp olive oil
  • 1 lemon
  • 1 tbsp fresh parsley
  • 1 tbsp fresh basil
  • to taste Salt and pepper
  • 2 tbsp tahini optional
  • 200 g Mixed greens for the side salad optional

  • Heatproof mixing bowl
  • Chef's knife
  • Cutting board

Method
 

  1. Begin by draining the tofu and pressing it to remove excess moisture. Slice into bite-sized cubes. Prepare the zucchini by cutting it into thin rounds.
  2. Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the zucchini and sauté for about 5 minutes until tender. Add the frozen peas and cook for an additional 2-3 minutes. Season with salt and pepper. Remove from the pan and set aside.
  3. In the same frying pan, add the remaining tablespoon of olive oil and the sliced tofu. Cook for about 8-10 minutes, flipping occasionally, until golden and crisp on all sides.
  4. In a mixing bowl, combine the lemon juice, lemon zest, fresh parsley, fresh basil, salt, and pepper. Mix well to combine.
  5. Lay out the whole wheat wraps on a clean surface. Layer the sautéed vegetables and browned tofu onto each wrap, drizzling the lemon herb sauce generously over the filling.
  6. Carefully roll the wraps up, tucking in the ends as you go. Cut in half and serve with a side salad of mixed greens drizzled with tahini.

Notes

Feel free to swap out the zucchini for any other vegetable you enjoy – bell peppers or spinach work wonderfully!
