  • 400 ml coconut milk
  • 150 g red lentils, rinsed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp vegetable oil
  • 1 liter chicken broth
  • 1 tsp turmeric powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped optional
  • Lime wedges optional
  • Sliced scallions optional

Equipment

  • Deep fryer or large pot
  • Chef's knife
  • Mixing spoon

  • Blender (for a creamier broth)

Method

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  2. Stir in the garlic and ginger, cooking for another 2 minutes until fragrant.
  3. Add the diced chicken breast and cook until browned on the outside, about 5 minutes.

  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 20 minutes, or until the lentils are tender.
