  • 300 g 2 medium apples, peeled and diced
  • 120 g 1 ripe banana, mashed
  • 100 g 100 g dark chocolate, melted
  • 2 large eggs
  • 50 g 50 g cocoa powder
  • 100 g 100 g honey or maple syrup
  • 1 tsp 1 tsp vanilla extract
  • 1 tsp 1 tsp baking powder
  • 150 g 150 g mixed berries (strawberries, blueberries, raspberries)
  • Whipped cream or Greek yogurt for serving optional

Method
 

  1. Preheat your oven to 180°C (350°F). Grease the muffin tin or ramekins lightly with non-stick spray.
  2. In a mixing bowl, combine the diced apples and mashed banana. Set aside.
  3. In another bowl, whisk together the melted dark chocolate, eggs, honey (or maple syrup), vanilla extract, cocoa powder, and baking powder until smooth.
  4. Pour the chocolate mixture over the fruit and fold gently until the fruit is evenly coated.
  5. Divide the mixture evenly among the prepared muffin tin or ramekins.
  6. Bake in the preheated oven for 20–25 minutes, or until the tops are set and slightly firm to the touch.
