Light Coconut Fried Pastry with Coconut Flakes

- In a mixing bowl, combine flour, baking powder, and salt.
- Add the coconut milk, sugar, egg, and vanilla extract to the dry ingredients, mixing until a smooth dough forms.
- Cover the dough with a cloth and let it rest for 15 minutes.
- On a floured surface, roll out the dough to approximately 0.5 cm thickness.
- Cut the dough into squares about 5x5 cm.
- Heat vegetable oil in a frying pan over medium heat (around 180°C / 350°F).
- Carefully drop the dough squares into the hot oil, frying until they turn golden brown, about 3 minutes per side.
- Use a slotted spoon to transfer the fried pastries to a cooling rack lined with paper towels to absorb excess oil.
- While still warm, gently roll the pastries in desiccated coconut to coat evenly.
- Serve warm or at room temperature with your choice of toppings.
