Ingredients
  

  • 250 g all-purpose flour
  • 150 ml coconut milk
  • 50 g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 tsp vanilla extract
  • 200 g (for coating) desiccated coconut
  • 500 ml (for frying) vegetable oil
  • (mango, berries) Fresh fruit optional
  • or chocolate drizzle Honey optional

  • Large mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Frying pan (for sautéing pumpkin)
  • Slotted spoon
  • Cooling rack

Method
 

  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Add the coconut milk, sugar, egg, and vanilla extract to the dry ingredients, mixing until a smooth dough forms.
  3. Cover the dough with a cloth and let it rest for 15 minutes.
  4. On a floured surface, roll out the dough to approximately 0.5 cm thickness.
  5. Cut the dough into squares about 5x5 cm.
  6. Heat vegetable oil in a frying pan over medium heat (around 180°C / 350°F).
  7. Carefully drop the dough squares into the hot oil, frying until they turn golden brown, about 3 minutes per side.
  8. Use a slotted spoon to transfer the fried pastries to a cooling rack lined with paper towels to absorb excess oil.
  9. While still warm, gently roll the pastries in desiccated coconut to coat evenly.
  10. Serve warm or at room temperature with your choice of toppings.
