Ingredients
  

  • approximately 400 g 2 ripe Darwin mangoes, peeled and sliced
  • 150 g 150g mixed salad greens
  • approximately 150 g 1 red bell pepper, thinly sliced
  • approximately 200 g 1 cucumber, diced
  • 50 g 50g red onion, thinly sliced
  • 30 g 30g fresh coriander, chopped
  • 50 g 50g toasted macadamia nuts, chopped optional
  • Lime wedges optional

Method
 

  1. Start by preparing the dressing. In a mixing bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Set aside.
  2. In a large mixing bowl, combine the sliced mango, mixed salad greens, red bell pepper, cucumber, and red onion. Toss gently to avoid bruising the mango.
  3. Drizzle the prepared dressing over the salad and gently toss to coat all of the ingredients evenly.
  4. Transfer the salad to a serving platter, and if using, sprinkle with chopped macadamia nuts and fresh coriander.
