- Start by preparing the dressing. In a mixing bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Set aside.
- In a large mixing bowl, combine the sliced mango, mixed salad greens, red bell pepper, cucumber, and red onion. Toss gently to avoid bruising the mango.
- Drizzle the prepared dressing over the salad and gently toss to coat all of the ingredients evenly.
- Transfer the salad to a serving platter, and if using, sprinkle with chopped macadamia nuts and fresh coriander.
