Ingredients
  

  • 150 g all-purpose flour
  • 100 g pitted dates, finely chopped
  • 100 g granulated sugar
  • 50 g unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100 ml buttermilk
  • 150 g fruit jam (e.g., raspberry or apricot) optional
  • Fresh mint leaves for garnish optional

Method
 

  1. Preheat your oven to 180°C (350°F). Grease and flour the two round cake pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.
  3. Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In another bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture.
  5. Gently fold in the finely chopped dates into the batter until evenly distributed.
  6. Divide the batter evenly between the prepared cake pans and smooth out the tops.
  7. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. The cakes should be lightly golden and spring back when touched.
  8. Remove from the oven and let cool in the pans for 10 minutes before transferring to a cooling rack to cool completely.
  9. Once cooled, spread a layer of fruit jam generously on top of one cake layer. Place the second layer on top and spread more jam over the top. Optionally, decorate with fresh mint leaves.
  10. Slice and serve!
