- In a mixing bowl, whisk together the egg yolks, sugar, cornstarch, and salt until well combined and smooth.
- In a saucepan, heat the heavy cream, whole milk, vanilla bean seeds, and split pod over medium heat. Bring to a gentle simmer but do not boil.
- Gradually pour the hot milk mixture into the egg mixture, whisking continuously to temper the eggs.
- Return the combined mixture to the saucepan over low heat, stirring constantly until the mixture thickens and reaches about 80°C (175°F). It should coat the back of a spoon.
- Remove from heat and strain the mixture through a fine mesh strainer into a clean bowl to remove any lumps and the vanilla pod.
- Cover the filling with plastic wrap directly on the surface to prevent a skin from forming. Allow it to cool for 1 hour at room temperature, then refrigerate for at least 1 hour.
- Once chilled, pour the thickened vanilla filling into the prepared pie crust, smoothing out the top with a spatula.
- Refrigerate the pie for at least another hour to set properly.
- Before serving, top with fresh berries and dust with powdered sugar. Garnish with mint leaves if desired.
