Ingredients
  

  • 1 (23 cm) 1 pre-baked pie crust
  • 400 ml 400 ml heavy cream
  • 200 ml 200 ml whole milk
  • 3 large 3 large egg yolks
  • 100 g 100 g sugar
  • 1 1 vanilla bean, split and seeds scraped
  • 20 g 20 g cornstarch
  • A pinch of salt
  • 200 g 200 g mixed fresh berries (strawberries, blueberries, raspberries) optional
  • 10 g 10 g powdered sugar for dusting optional
  • Fresh mint leaves for garnish optional

Method
 

  1. In a mixing bowl, whisk together the egg yolks, sugar, cornstarch, and salt until well combined and smooth.
  2. In a saucepan, heat the heavy cream, whole milk, vanilla bean seeds, and split pod over medium heat. Bring to a gentle simmer but do not boil.
  3. Gradually pour the hot milk mixture into the egg mixture, whisking continuously to temper the eggs.
  4. Return the combined mixture to the saucepan over low heat, stirring constantly until the mixture thickens and reaches about 80°C (175°F). It should coat the back of a spoon.
  5. Remove from heat and strain the mixture through a fine mesh strainer into a clean bowl to remove any lumps and the vanilla pod.
  6. Cover the filling with plastic wrap directly on the surface to prevent a skin from forming. Allow it to cool for 1 hour at room temperature, then refrigerate for at least 1 hour.
  7. Once chilled, pour the thickened vanilla filling into the prepared pie crust, smoothing out the top with a spatula.
  8. Refrigerate the pie for at least another hour to set properly.
  9. Before serving, top with fresh berries and dust with powdered sugar. Garnish with mint leaves if desired.
