Mini Honey Dessert Bar with Date Caramel

- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine the almond flour, rolled oats, melted butter, honey, egg, vanilla extract, baking powder, and a pinch of salt. Stir until well combined and smooth.
- Pour the mixture into the prepared baking tray, spreading it evenly. Bake for 25 minutes or until lightly golden on the edges. Allow it to cool for 30 minutes.
- In a blender, combine the chopped dates, water, and vanilla extract. Blend until smooth and creamy, adjusting with more water if needed until you achieve a desired consistency.
- Once the base is cool, spread the date caramel evenly over the top of the dessert base.
- Allow the bars to set for an additional 10 minutes before cutting them into neat pieces. Garnish with chopped nuts and a sprinkle of sea salt if desired.

If you're not a fan of dates, consider using maple syrup or agave for the caramel.
