  • 150 g almond flour
  • 100 g rolled oats
  • 75 g unsalted butter, melted
  • 70 g honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch salt
  • 200 g Medjool dates, pitted and chopped
  • 100 ml water
  • 1 tsp vanilla extract
  • Chopped nuts for garnish optional
  • Sea salt flakes optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the almond flour, rolled oats, melted butter, honey, egg, vanilla extract, baking powder, and a pinch of salt. Stir until well combined and smooth.
  3. Pour the mixture into the prepared baking tray, spreading it evenly. Bake for 25 minutes or until lightly golden on the edges. Allow it to cool for 30 minutes.
  4. In a blender, combine the chopped dates, water, and vanilla extract. Blend until smooth and creamy, adjusting with more water if needed until you achieve a desired consistency.
  5. Once the base is cool, spread the date caramel evenly over the top of the dessert base.
  6. Allow the bars to set for an additional 10 minutes before cutting them into neat pieces. Garnish with chopped nuts and a sprinkle of sea salt if desired.
