Ingredients
  

  • 200 g all-purpose flour
  • 50 g powdered sugar
  • 100 g unsalted butter, melted
  • 100 g ground pistachios
  • 1 tsp vanilla extract
  • 50 ml milk
  • 1 tsp baking powder
  • (for frying) Vegetable oil
  • Zest of 1 lemon optional
  • Zest of 1 orange optional
  • (for garnish) Chopped pistachios optional
  • (for dusting) Powdered sugar optional

Method
 

  1. In a mixing bowl, combine flour, powdered sugar, and baking powder. Stir to combine.
  2. Add melted butter, ground pistachios, vanilla extract, and milk to the dry ingredients. Mix until a dough forms.
  3. On a lightly floured surface, roll out the dough to about 1 cm thick.
  4. Cut the dough into squares or rectangles and let them rest for about 30 minutes.
  5. Heat vegetable oil in a frying pan over medium-high heat. Ensure the oil is hot enough by testing with a small piece of dough; it should bubble and rise to the surface.
  6. Carefully drop the pastry squares into the oil and fry until golden brown, about 2-3 minutes on each side. Drain on a cooling rack.
  7. Once cooled slightly, sprinkle the fried pastries with lemon and orange zest, and garnish with chopped pistachios.
  8. Dust with powdered sugar before serving. Enjoy them warm or at room temperature!
