Ingredients
  

  • 200 g pitted Medjool dates
  • 150 g granulated sugar
  • 60 g unsalted butter
  • 120 ml brewed coffee (cooled)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 200 g sweetened condensed milk
  • 100 g all-purpose flour
  • 1/2 tsp baking soda
  • Coarse sea salt (for garnish) optional

Method
 

  1. In a medium saucepan over low heat, combine the pitted dates with 150 ml of water. Stir until they soften and can be mashed into a smooth paste. This should take about 5 minutes. Remove from heat and allow to cool slightly.
  2. In a mixing bowl, blend the date paste with the granulated sugar, unsalted butter, brewed coffee, vanilla extract, and salt until well combined.
  3. Fold in the sweetened condensed milk, followed by the all-purpose flour and baking soda. Mix until just combined, being careful not to over-mix.
  4. Line the baking pan with parchment paper, allowing some to overhang for easy removal. Spread the mixture evenly into the pan and smooth the top with a rubber spatula.
  5. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes or until the edges are golden and the center is slightly firm to the touch.
  6. Let the caramel chews cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely for at least 1 hour.
  7. Once cooled, cut into neat squares and drizzle with the date caramel topping. Optionally sprinkle with coarse sea salt for an added flavor dimension.
