One-Bowl Coffee Caramel Chews with Date Caramel

- In a medium saucepan over low heat, combine the pitted dates with 150 ml of water. Stir until they soften and can be mashed into a smooth paste. This should take about 5 minutes. Remove from heat and allow to cool slightly.
- In a mixing bowl, blend the date paste with the granulated sugar, unsalted butter, brewed coffee, vanilla extract, and salt until well combined.
- Fold in the sweetened condensed milk, followed by the all-purpose flour and baking soda. Mix until just combined, being careful not to over-mix.
- Line the baking pan with parchment paper, allowing some to overhang for easy removal. Spread the mixture evenly into the pan and smooth the top with a rubber spatula.
- Bake in a preheated oven at 180°C (350°F) for 15-20 minutes or until the edges are golden and the center is slightly firm to the touch.
- Let the caramel chews cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely for at least 1 hour.
- Once cooled, cut into neat squares and drizzle with the date caramel topping. Optionally sprinkle with coarse sea salt for an added flavor dimension.
