Ingredients

  • 200 g all-purpose flour
  • 250 g granulated sugar
  • 150 g unsweetened cocoa powder
  • 100 g unsalted butter, softened
  • 4 large eggs
  • 240 ml whole milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 50 g coconut flakes for topping optional
  • (for serving) Whipped cream optional

Equipment

  • 9-inch round cake pans (2)
  • Heatproof mixing bowl
  • Whisk or electric mixer
  • Cooking spatula
  • Cooling rack

Method

  1. Preheat your oven to 180°C (350°F). Grease and flour the cake pan to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Alternate adding the dry ingredients and the milk to the butter mixture, mixing until just combined. Avoid overmixing to keep the cake tender.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a cooling rack.
  9. Once completely cooled, sprinkle the top with coconut flakes and optionally serve with whipped cream.
