Ingredients
  

  • 500 ml whole milk
  • 200 ml heavy cream
  • 150 g granulated sugar
  • vanilla bean, split and seeds scraped
  • 4 large egg yolks
  • 1 tsp pure vanilla extract
  • 400 g apples, peeled and diced optional
  • 50 g brown sugar optional
  • 1 tsp cinnamon optional
  • 1 tbsp lemon juice optional

  • Blender (for apple compote)

Method
 

  1. In a large mixing bowl, whisk together the egg yolks and granulated sugar until light and frothy.
  2. In a saucepan over medium heat, combine the whole milk, heavy cream, vanilla bean seeds, and the vanilla pod. Heat until just simmering, stirring occasionally.
  3. Gradually pour the hot milk mixture into the yolk mixture, whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 8-10 minutes). Do not boil.
  5. Remove the vanilla pod and transfer the mixture to a mixing bowl. Stir in the pure vanilla extract.
  6. Cover and refrigerate the mixture for at least 4 hours or until fully chilled.
  7. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions, then transfer to a container and freeze until firm (about 2 hours).
  8. In a saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 10-15 minutes, stirring occasionally until the apples are soft and the mixture is syrupy.
  9. Allow the compote to cool slightly before serving.
  10. Serve scoops of gelato alongside the warm apple compote and enjoy!
