- In a large mixing bowl, whisk together the egg yolks and granulated sugar until light and frothy.
- In a saucepan over medium heat, combine the whole milk, heavy cream, vanilla bean seeds, and the vanilla pod. Heat until just simmering, stirring occasionally.
- Gradually pour the hot milk mixture into the yolk mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 8-10 minutes). Do not boil.
- Remove the vanilla pod and transfer the mixture to a mixing bowl. Stir in the pure vanilla extract.
- Cover and refrigerate the mixture for at least 4 hours or until fully chilled.
- Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions, then transfer to a container and freeze until firm (about 2 hours).
- In a saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 10-15 minutes, stirring occasionally until the apples are soft and the mixture is syrupy.
- Allow the compote to cool slightly before serving.
- Serve scoops of gelato alongside the warm apple compote and enjoy!

Notes
If you’re craving a lighter version, feel free to swap out half of the heavy cream for more milk!
Have fun playing with flavors; try adding a splash of bourbon to the compote or mixing in fresh berries into the gelato base.
This gelato-style ice cream can be stored in an airtight container in the freezer for up to 2 weeks, but it's best enjoyed fresh.
If it becomes too hard to scoop, simply let it sit at room temperature for a few minutes before serving.
