- In a large mixing bowl, whisk together the flour, sugar, salt, and active dry yeast until well combined.
- Add the eggs, warm milk, melted butter, and lemon zest to the dry ingredients. Mix using a wooden spoon or your hands until a soft dough forms.
- Knead the dough lightly in the bowl for about 5 minutes until it becomes smooth and elastic.
- Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour, or until doubled in size.
- Preheat your oven to 180°C (350°F).
- Gently deflate the dough and turn it out onto a lightly floured surface. Add the berries and fold gently to incorporate them.
- Shape the dough into a roll and transfer it to the greased baking dish, seam side down.
- Allow the dough to rest for another 15 minutes while the oven heats.
- Bake in the preheated oven for 25 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let it cool for a few minutes before slicing into neat pieces. Dust with powdered sugar and garnish with fresh mint.
