Ingredients
  

  • 500 g all-purpose flour
  • 75 g sugar
  • 10 g salt
  • 1 packet (7) g active dry yeast
  • 4 large eggs (room temperature)
  • 100 ml whole milk (warm)
  • 150 g unsalted butter (melted)
  • Zest of 2 lemons
  • 200 g mixed berries (strawberries, blueberries, raspberries)
  • Powdered sugar for dusting optional
  • Fresh mint leaves for garnish optional

Method
 

  1. In a large mixing bowl, whisk together the flour, sugar, salt, and active dry yeast until well combined.
  2. Add the eggs, warm milk, melted butter, and lemon zest to the dry ingredients. Mix using a wooden spoon or your hands until a soft dough forms.
  3. Knead the dough lightly in the bowl for about 5 minutes until it becomes smooth and elastic.
  4. Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat your oven to 180°C (350°F).
  6. Gently deflate the dough and turn it out onto a lightly floured surface. Add the berries and fold gently to incorporate them.
  7. Shape the dough into a roll and transfer it to the greased baking dish, seam side down.
  8. Allow the dough to rest for another 15 minutes while the oven heats.
  9. Bake in the preheated oven for 25 minutes, or until golden brown and a toothpick inserted comes out clean.
  10. Let it cool for a few minutes before slicing into neat pieces. Dust with powdered sugar and garnish with fresh mint.
