Ingredients
  

  • 250 g all-purpose flour
  • 125 g unsalted butter, chilled and cubed
  • 50 g powdered sugar
  • 1 large egg
  • 600 g apples, peeled, cored, and thinly sliced
  • 150 g brown sugar
  • 200 ml heavy cream
  • 1 tsp vanilla extract
  • 50 g desiccated coconut, toasted
  • Whipped cream for serving optional
  • A sprinkle of cinnamon optional

Method
 

  1. In a mixing bowl, combine the flour, powdered sugar, and butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. Add the egg and mix until the dough comes together. Form it into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat your oven to 180°C (350°F).
  3. On a floured surface, roll out the chilled pastry to fit your tart pan. Gently press it into the pan and trim any excess. Poke holes in the bottom with a fork to prevent bubbling.
  4. In a bowl, toss the apple slices with brown sugar and vanilla extract. Layer the apples evenly over the pastry base.
  5. In another bowl, whisk together the heavy cream and any remaining brown sugar. Slowly pour this mixture over the apples in the tart.
  6. Bake in the preheated oven for about 40 minutes or until the apples are tender and the cream has set slightly. The surface should be golden brown.
  7. In the last 5 minutes of baking, sprinkle toasted coconut flakes on top for added flavor and texture.
  8. Allow the tart to cool for 10 minutes in the pan before transferring to a wire rack. Serve warm or at room temperature, garnished with whipped cream or a sprinkle of cinnamon, if desired.
