Ingredients

  • 500 g all-purpose flour
  • 50 g granulated sugar
  • 10 g salt
  • 10 g instant yeast
  • 4 large eggs
  • 100 ml whole milk, warmed
  • 100 g unsalted butter, softened
  • 100 ml honey
  • 100 g pitted dates, chopped (for caramel) optional
  • 50 ml water (for caramel) optional
  • Sea salt flakes (for garnish) optional

Equipment

  • Heatproof mixing bowl
  • Stand mixer with dough hook attachment
  • 20 cm (8 inch) square baking tray
  • Baking tray lined with parchment paper
  • Small saucepan
  • Electric mixer (or whisk)

Method

  1. In a mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well.
  2. Add the eggs, warm milk, and honey to the dry ingredients. Mix until a dough starts to form.
  3. Knead the dough using a stand mixer on medium speed for about 10 minutes until it becomes smooth and elastic.
  4. Gradually add the softened butter to the dough, kneading until fully incorporated, about another 5 minutes.
  5. Transfer the dough to a lightly greased bowl, cover it with a damp cloth, and let it rest for 60 minutes, or until doubled in size.
  6. Preheat your oven to 180°C (350°F).
  7. Once the dough has risen, punch it down to release the air. Divide it into 12 equal pieces (about 80 g each).
  8. Shape each piece into a ball and place them on a lined baking tray, leaving space between each roll.
  9. Cover the rolls with a cloth and let them rise for an additional 30 minutes.
  10. Bake the rolls in the preheated oven for 20–25 minutes, or until golden brown. They should sound hollow when tapped.
  11. While the rolls are baking, prepare the date caramel. In a small saucepan, combine chopped dates and water. Simmer on a low heat until dates are soft; mash into a smooth consistency using a whisk.
  12. Once the rolls are baked, let them cool slightly before drizzling the date caramel on top.
  13. Optionally, garnish with sea salt flakes for a touch of flavor contrast.

For a delightful twist, feel free to experiment with different toppings like a sprinkle of chopped nuts or a drizzle of your favorite syrup.
