  • 250 g all-purpose flour
  • 150 g granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 60 ml vegetable oil
  • 120 ml buttermilk
  • Zest of 1 lemon
  • 30 ml fresh lemon juice
  • 100 g date caramel optional
  • Lemon zest for garnish optional
  • Crushed nuts optional

Equipment

  • Heatproof mixing bowl
  • Electric mixer (or whisk)
  • Doughnut pan
  • Measuring cups and spoons
  • Cooling rack
  • Sifter for flour

Method

  1. Preheat your oven to 180°C (350°F) and lightly grease a doughnut pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. In a separate bowl, whisk together the eggs, vegetable oil, buttermilk, lemon zest, and lemon juice until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  5. Spoon the batter into the doughnut pan, filling each cavity about three-quarters full.
  6. Bake in the preheated oven for 12-15 minutes or until the doughnuts are golden and a toothpick inserted comes out clean.
  7. Allow the doughnuts to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. Once cooled, drizzle the date caramel over the doughnuts and garnish with additional lemon zest or crushed nuts if desired.
  9. Serve and enjoy your delicious soft-baked lemon doughnuts!

Notes

For a fun twist, try swapping out some of the all-purpose flour for almond flour for a nuttier flavor.
If you're looking to reduce sugar, feel free to cut back on the caramel or use a sugar-free substitute for an equally delightful treat.
These doughnuts can be stored in an airtight container at room temperature for up to three days.
To enjoy them warm, just pop them in the microwave for a few seconds!
Happy baking!
