Method
 

  1. Heat the olive oil in a skillet over medium heat. Once heated, add the diced beets and sliced radishes, sautéing for about 3-4 minutes until they soften slightly.
  2. While the vegetables are cooking, crack the eggs into a mixing bowl and whisk them until smooth. Season with salt and pepper.
  3. Stir the harissa paste into the skillet with the beets and radishes, ensuring everything is well-coated.
  4. Create small wells in the mixture and gently pour the whisked eggs into these wells. Cover the skillet with a lid and let cook for about 5-7 minutes, or until the eggs are set to your desired doneness.
  5. While the eggs are cooking, warm the pita breads in a separate pan or microwave for about 30 seconds.
