Method
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Increase the heat to medium-high, then add the beef cubes and brown on all sides for about 5-6 minutes.
- Add the diced carrot, potato, and zucchini to the pot, stirring briefly to combine.
- Pour in the beef broth, adding the thyme, bay leaf, and optional salt; bring to a boil.
- Once boiling, reduce to a simmer, cover, and cook for 25-30 minutes or until the beef and vegetables are very soft. Stir occasionally.
- If using, add the green peas for the last 5 minutes to heat through.
- Remove the bay leaf before serving and allow the stew to cool slightly.
- Using a fork or blender, mash to the desired texture for your baby, usually a smooth or slightly chunky consistency.

Notes
Try adding spinach or sweet potatoes depending on what your little one enjoys!
This stew can be made ahead of time and stored in the fridge for up to 3 days. Just reheat gently on the stove or in the microwave.
Encourage your baby to explore the textures, starting with mash and moving towards more chunkiness as they grow more confident in their eating skills. Enjoy!
