Ingredients
  

  • 300 g beef stew meat, cut into small cubes
  • 1 medium carrot, diced (about 100 g)
  • 1 potato, peeled and diced (about 150 g)
  • 1 medium zucchini, diced (about 100 g)
  • 1 small onion, finely chopped (about 50 g)
  • 500 ml low-sodium beef broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Pinch of salt (to taste, optional)
  • 1 bay leaf
  • 50 g green peas (can be added towards the end of cooking) optional

  • Sharp knife

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Increase the heat to medium-high, then add the beef cubes and brown on all sides for about 5-6 minutes.
  3. Add the diced carrot, potato, and zucchini to the pot, stirring briefly to combine.
  4. Pour in the beef broth, adding the thyme, bay leaf, and optional salt; bring to a boil.
  5. Once boiling, reduce to a simmer, cover, and cook for 25-30 minutes or until the beef and vegetables are very soft. Stir occasionally.
  6. If using, add the green peas for the last 5 minutes to heat through.
  7. Remove the bay leaf before serving and allow the stew to cool slightly.
  8. Using a fork or blender, mash to the desired texture for your baby, usually a smooth or slightly chunky consistency.

Notes

You can substitute the beef with chicken or tofu for a different protein source.
