  • 150 g brown rice, rinsed
  • 1 small small carrot, finely chopped (about 50 g)
  • 1 small small zucchini, finely chopped (about 50 g)
  • 480 ml vegetable broth (low sodium)
  • 1 tbsp olive oil

Method
 

  1. Start by rinsing the lentils and brown rice under cold water. Chop the carrot and zucchini into small, soft pieces to ensure they cook quickly and are easy to chew.
  2. In a medium pot, combine the rinsed lentils, brown rice, chopped carrot, zucchini, and vegetable broth. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and let the mixture simmer for about 25-30 minutes until the lentils and rice are soft and fully cooked. Stir occasionally to prevent sticking.
  4. After cooking, remove from heat and stir in the olive oil. If you wish for a smoother consistency, blend or mash the mixture to your desired texture.
  5. Allow the bowl to cool for about 5 minutes before serving to your little one. Scoop into small portions for easy eating.
