  • 600 ml low-sodium chicken broth
  • 1 medium carrot, peeled and diced

  • a pinch salt
  • Finely chopped spinach or peas optional

Method
 

  1. Begin by chopping the chicken breast into small pieces. Dice the carrot and potato into similar-sized cubes for even cooking.
  2. In a pot, heat the olive oil over medium heat. Add the chicken pieces and sauté for about 5 minutes until they lose their pink color.
  3. Add the diced carrot and potato to the pot, sautéing for another 3 minutes.
  4. Pour in the low-sodium chicken broth along with the white rice. Bring to a boil, then reduce the heat to low and cover the pot. Allow it to simmer for about 25 minutes or until the rice and vegetables are soft and the chicken is fully cooked.
