  • 400 ml full-fat coconut milk
  • 200 g sweetened condensed milk
  • 100 g brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ½ tsp vanilla extract
  • 1 pinch salt
  • 50 g toasted sesame seeds optional

Method
 

  1. In a large mixing bowl, combine the grated carrots, coconut milk, sweetened condensed milk, brown sugar, cinnamon, nutmeg, ginger, salt, and vanilla extract. Whisk until well blended and smooth.
  2. Pour the mixture into a loaf pan or a freezer-safe container. Use a spatula to ensure an even layer.
  3. Cover tightly with plastic wrap or a lid and place it in the freezer. Let it freeze for at least 4 hours or until firm.
  4. To prepare the sesame crunch, toast sesame seeds in a dry skillet over medium heat for about 3-4 minutes until golden. Stir frequently to avoid burning.
