Method
 

  1. Preheat your oven to 180°C (350°F) and grease your doughnut pan.

  3. In another bowl, whisk together the eggs, whole milk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Gradually add the wet ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix; a few lumps are okay.
  5. Transfer the batter to a piping bag (if using) and pipe it into the prepared doughnut pan, filling each cavity about 2/3 full.
  6. Bake in the preheated oven for 15-20 minutes until a toothpick inserted comes out clean. The doughnuts should spring back when lightly touched.
  7. Allow the doughnuts to cool in the pan for 10 minutes before carefully transferring them to a wire rack to cool completely.
