- Preheat your oven to 180°C (350°F) and grease your doughnut pan.
- In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, whole milk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth.
- Gradually add the wet ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix; a few lumps are okay.
- Transfer the batter to a piping bag (if using) and pipe it into the prepared doughnut pan, filling each cavity about 2/3 full.
- Bake in the preheated oven for 15-20 minutes until a toothpick inserted comes out clean. The doughnuts should spring back when lightly touched.
- Allow the doughnuts to cool in the pan for 10 minutes before carefully transferring them to a wire rack to cool completely.
- Once cooled, dust the doughnuts with icing sugar and serve them with a generous scattering of fresh mixed berries on top.
- (Optional) Drizzle with extra lemon juice for more flavor before enjoying!
