  • 120 ml coconut milk
  • 100 g unsalted butter, melted
  • 3 large eggs

  • 1/2 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 50 g coconut flakes, toasted for garnish optional

Method

  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing to maintain a tender texture.
  6. Pour the pie batter into the prepared pie dish, smoothing the top with a spatula.
  7. Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean. The pie should be firm to touch and lightly golden on top.
  8. Allow the pie to rest for at least 10 minutes before slicing.
