- In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well.
- In a separate bowl, whisk together the eggs, warm milk, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry mixture and stir until a rough dough forms.
- Add softened butter and knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm area for 1 hour, or until doubled in size.
- Once risen, punch down the dough and roll it out into a rectangle, approximately 1 cm thick.
- Cut the dough into equal squares, about 10 cm each, and roll each square into a ball.
- Arrange the balls on a lined baking tray, allowing enough space for them to rise and expand.
- Cover loosely with a towel and let them rise for another 30 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the brioche rolls for 15-20 minutes or until golden brown on top.
- For the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over the warm rolls and garnish with extra lemon zest if desired.
